Canberra's first ever Filipino food and wine pairing event!

We recently visited Papa J's Resto Bar located on Challis Street in Dickson for their 7 course degustation and wine pairing with 7000 Island Wines. And let us tell you, it was a unique experience, pairing filipino cuisine with wine. Who would have thought right?

Each of the 7 degustation dishes were perfectly paired with a glass of wine.

What do expect...

L` aperitif:

Delectable delices, with young jackfruit in coconut milk, and crispy milk fish skin, porcini mushroom + mystery wine pairing by Chef Sean Saquing

L` entrée:

Our signature uber crispy chicken skin with crème fraiche, topped with caviar, garnished with pickled red onion + mystery wine pairing by Chef Richard Antipolo

Hors d` oeuvres:

Kangkong (water spinach) fritters, bagoong aioli (bagoong: salted shrimp paste) = mystery wine pairing by Chef Cristina Cortez

Fish:

Lightly braised milkfish with Filipino salad, house dressing + mystery wine pairing by Chef Joemel Naboya

The Under-Card:

Asian 5-spice beef brisket, Papa J's coleslaw + mystery wine pairing by Chef Joemel Naboya

The Main Event:

Suckling roasted pig "Lechon" (pork belly) served on a bed of truffled black rice, house lechon sauce + mystery wine pairing by Chef Joemel Naboya

Dessert:

Coconut ice cream, bathed in spiced rum salted caramel, toasted coconut + mystery wine pairing by Chef Joemel Naboya
